Delicious Pumpkin Cream

Today at Latino Gringos™ we want to bring you a very easy to make and nutritious recipe, it is a pumpkin cream, or squash as it is known in some Latin regions. Without further ado, we present the ingredients and their preparation:

Almuerzos lunch Crema de auyama. – La Uchireña


• 1 kg of pumpkin
• 1 Onion
• 2 Cloves of garlic
• 1 Cup of leek (chopped)
• Half pepper
• 1 lt of water
• Butter/Margarine (3 tablespoons)
• Salt
• Pepper


  1. Chop the pumpkin and remove the seeds. Put the chopped pumpkin into a saucepan, add enough water and boil until soft for about 20 – 30 minutes.
  2. During cooking, add the garlic, onion, leek and minced pepper. Let cook for the estimated time, until the pumpkin is soft enough
  3. Once the boil is ready, let it rest for about 15 minutes.
  4. Then, pour it into the blender, if it is a lot, you can prepare in parts.
  5. Put the mixture to liquefy, once the smoothie is formed, add the butter and a pinch of salt and pepper to taste.
  6. Blend until you get a consistent cream.

Deliciosa crema de auyama o calabaza

Hoy en Latino Gringos™ queremos traerte una receta muy fácil de hacer y nutritiva, se trata de una crema de calabaza, o auyama como la conocen en algunas regiones latinas. Sin más que decir, te presentamos los ingredientes y su preparación:

Receta de Deliciosa crema fría de auyama | Cocina y Vino


  • 1 kilo de auyama / calabaza
  • 1 cebolla
  • 2 dientes de ajo
  • 1 taza de ajoporro troceado
  • Medio pimenton
  •  Alrededor de 1 litro de agua
  • 3 cucharadas de mantequilla o margarina
  • Sal
  • Pimienta


  1. Pon a hervir la auyama/calabza troceada, sin semillas,  en una olla con suficiente agua hasta que ablande, alrededor de 20 – 30 minutos
  2. Añade durante el proceso de cocción el ajo, la cebolla, ajoporro y el pimenton troceado y deja cocinar por el tiempo estimado, hasta que la auyama/calabaza este suficientemente blanda
  3. Una vez listo el hervido, deja reposar por unos 15 minutos.
  4. Luego, viértelo en la licuadora, si es mucho, puedes ir preparando por partes.
  5. Pon a licuar la mezcla, una vez este ya formado el licuado, agrega las cucharadas de mantequilla y una pizca de sal y pimienta al gusto.
  6. Licua hasta obtener una crema consistente.
